vegan chocolate cookies

when i was at the oxbow school in napa, they had fresh baked vegan chocolate cookies in the kitchen just about every day. today the chicago rain reminded me of napa and what better to do on a rainy day off than bake? i switched up the recipe a little to make them less bad for you. they are too
too good. halving the recipe still makes quite a few cookies.

8 oz. earth balance margarine
1.5 c sugar
1.5 c brown sugar
.25 c canola oil
.5 c soy milk
2 c whole wheat flour
2 c all-purpose flour
6 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
.25 teaspoon salt
as many dark chocolate chips as you want
and i love a ton of walnuts too

preheat oven to 350. combine (using an electric mixer) earth balance at room temp with sugars in large bowl until smooth. add oil and soy milk, combine. in a separate bowl, sift together flours, cocoa, baking powder, baking soda, and salt. throw one bowl into the other, mix it all up. add your chips, and your walnuts if you like them. i use my hands to make small balls of dough (about 1") so that the cookies are smaller, a melon baller works really well too if you're rich and have one but i don't. bake them for 8-10 minutes depending on how shitty the oven in the apartment you're renting is.
